Growing up in the heart of Louisiana’s peach country, we always had plenty of peaches during the summer. I remember us taking my grandmother peaches and she would make the best peach cobbler!
The dietary restrictions in our family have caused us to experiment with recipes over the years. Last summer during COVID, we created this gluten and dairy free peach cobbler recipe. It brings back a lot of memories and we hope it will help you make memories with your family. This cobbler also pairs well with dairy free ice cream. Enjoy!
Peach Cobbler
This perfect dessert during the summer months can be paired with dairy-free ice cream for a delicious treat. You can also make it year round with organic frozen peaches!
Ingredients
- ¼ c coconut oil
- 1½ c one-to-one flour Bob's Red Mill 1-to-1 baking flour
- 1½ c sugar divided
- 4 tsp baking powder
- 1 c Almond milk
- ½ tsp vanilla extract
- 1 tsp cinnamon divided
- 2 lbs peaches sliced
Instructions
- Preheat oven 350º.
- Melt coconut oil in 9×13 dish.
- Combine flour, 1 cup of sugar, baking powder, cinnamon, almond milk, and vanilla extract. Pour half of the mixture in the dish.
- Combine peaches and a ½ cup of sugar. Pour on top of the batter in the dish.
- Pour remaining batter on top of peaches. Sprinkle with ½ teaspoon of cinnamon
- Bake for 50 minutes.
