Maple-glazed rainbow carrots

A perfect side for the holidays, these carrots have been a hit at home and at potluck dinners. You can also swap out regular carrots for rainbow carrots. It helps our daughter get more vegetables.😉

Slice them and cook in a pan, or use whole baby carrots and cook in the crockpot. Either way, your family and guests will love them… just ask my co-workers!

A sweet and buttery side without the dairy. These carrots are perfect for anytime of the year… especially the holidays.

Ingredients
  

  • 1 lb carrots
  • 3 tbsp brown sugar
  • 2 tbsp dairy-free butter
  • 2 tbsp maple syrup
  • ½ tsp cinnamon

Instructions
 

  • Wash carrots and slice, if desired. Melt butter, brown sugar, and maple syrup in a pan on medium heat until it begins to bubble.
  • Reduce heat to low and add carrots and cinnamon. Let simmer for 20 minutes. Stir occassionally.

Notes

If you cannot have tree nuts or coconut, you can substitute real butter.
These carrots can also be cooked in a crockpot on low for a few hours or until desired tenderness.
