What started as an attempt to use bananas before they had to be thrown out turned into one of our family’s favorite desserts. It is sweet enough to taste like dessert but when paired with the nut butter of your choice, makes a great breakfast for those crazy mornings (assuming it lasts that long– it never does around here!).
Pro-tip: peel and freeze those bananas before they go completely bad so you’ll always have bananas on hand!
Gluten-free Banana (Nut) Bread
Whether you're nuts or nut-free, this banana (nut) bread is delicious! Enjoy it at for breakfast, a snack, or dessert.
Ingredients
- 2 c gluten-free flour
- 1 tsp xanthan gum omit if your flour contains xanthan gum
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tbsp cinnamon
- 1 tsp nutmeg
- ¼ c white sugar
- ¼ c brown sugar
- ½ c chopped nuts optional
- 2 tsp vanilla extract
- ⅓ c olive oil
- 2 eggs large
- ⅔ c almond milk or other milk substitute
- 2 bananas overripe, medium or large
Instructions
- Preheat oven to 350º.
- In a large bowl, mix together all dry ingredients.
- In a medium bowl, mix together all wet ingredients and bananas.
- Pour wet ingredients into dry ingredients and mix until combined.
- Pour batter into 9×5 inch greased loaf pan. Bake for 55-65 minutes or until toothpick comes out clean.
