If you’ve never had tri tip, you’re missing out. This cut of beef is becoming popular in our house. Cook it on a wood fired grill or a gas burner with a smoke box. Cooked medium-rare to medium, a tri tip roast tastes great on its own, with garlic-chive butter, or this basil chimichurri. This cut of meat is fairly lean, so don’t over cook it. Do yourself a favor and grill one tonight.

Grilled tri tip
Grilled trip tip is climbing up my list of best cuts of beef. Marinate it, top with chimichurri, or serve with au jus.
Ingredients
- 2-3 lb tri tip steak
- 1 tbsp sea salt
- 1 tbsp black pepper
- 1 tbsp garlic powder
Instructions
- Mix seasonings and rub on meat. Let the tri tip sit out for at least an hour covered so it is room temperature before grilling.
- Preheat grill to 450º. Sear both sides over direct heat for 4-5 minutes. Then move to indirect heat and cook about 10-15 minutes on each side or until instant meat thermometer reads 130º in the thickest part of the meat.
- Remove from heat and tent with foil for about 10 minutes. Slice against the grain and serve with your choice of topping, if desired.
