Balsamic chicken with tomatoes and onions
This balsamic chicken recipe has become a family favorite with fresh tomatoes and basil straight from our garden.

Ingredients
- 1.5 lbs chicken breast, boneless, skinless
- 1 medium onion
- 1 pint tomatoes, petite medley
- 6 cloves garlic
- 2 Tbsp olive oil
- 10 leaves basil
- 1 tsp sea salt
- balsamic glaze
Instructions
- Preheat oven to 400º. Oil the baking dish and add chicken breasts.
- Slice onions and shallots and add to chicken. Wash tomatoes and pour into dish.
- Add garlic, basil, and salt. Bake for 40-45 minutes. (Baking times may vary)
