This balsamic chicken recipe has become a family favorite with fresh tomatoes and basil straight from our garden.

Ingredients
  

  • 1.5 lbs chicken breast, boneless, skinless
  • 1 medium onion
  • 1 pint tomatoes, petite medley
  • 6 cloves garlic
  • 2 Tbsp olive oil
  • 10 leaves basil
  • 1 tsp sea salt
  • balsamic glaze

Instructions
 

  • Preheat oven to 400º. Oil the baking dish and add chicken breasts.
  • Slice onions and shallots and add to chicken. Wash tomatoes and pour into dish.
  • Add garlic, basil, and salt. Bake for 40-45 minutes. (Baking times may vary)
