Basil chimichurri – a tasty topper for your meats and veggies

Sometimes you may feel like you are cooking the same thing over and over. Sauces, butters, and other condiments are a great way to change your dishes up.

Chimichurri is of Argentinian origin and traditionally made with parsley and red wine vinegar. We were out of both. 🤷‍♂️ So I decided to use fresh basil from our garden and white wine vinegar. Our daughter said it looked like “slop”, but she went back for seconds. I admit, it looks like I blended up Shrek, but it doesn’t taste like it! This was delicious on grilled tri tip, but can also accompany just about any meat or vegetable.

Ingredients
  

  • 1 ½ cups basil fresh, packed
  • ¼ cup olive oil
  • 3 cloves garlic
  • 2 tbsp white wine vinegar
  • 2 tbsp lemon juice
  • ½ tsp sea salt
  • ½ tsp black pepper
  • ½ tsp red pepper flakes

Instructions
 

  • Blend all ingredients. Serve room temperature.
